Japanese Kaiseki Cake
This was a really special cake done for the owners of a high-end Kaiseki restaurant in Singapore. We were asked to replicate 3 of the chef's dishes out of sugar by our client. Now, you must know that every dish that the chef's whips out looks/is a piece of art, so we knew we were treading on really thin ice over here!
